220 grams of brown sugar
300 grams of oat flakes
2 teaspoons vanilla paste or liquid vanilla
½ sachet Royal yeast
2 pinches of salt
2 eggs size L
50 grams of maple syrup or honey
150 grams of mild olive oil
Preparation
We start by preheating the oven to 220°C.
We start by mixing the dry ingredients inside the Thermomix bowl, the wholemeal flour, the yeast, the oat flakes, as well as brown sugar and salt, program.
5 seconds / Speed 6.
Then, add the liquid ingredients, the eggs, the maple syrup or honey, the vanilla, program.
10 seconds / Speed 6.
Then again program.
2 minutes / Spike speed.
Once the digestive biscuit dough is ready, you will notice that it is a bit sticky, due to the effect of the maple syrup or honey, so stretching on a work table is not a good option. In this case, take portions with your hand or with a teaspoon so that they are the same size and form balls.
Place the balls of dough on a lightly greased and floured baking sheet, with a reasonable distance between each ball since they tend to expand during baking due to the yeast.
Once the balls are formed, with the help of the back of a glass (it can be the beaker of the thermomix lid) slightly flatten each ball before baking.
Bake at 200°C for 10 to 12 minutes, the time will depend on the intensity of your oven and how crispy you want the cookies.
At the end of the baking time, remove them from the oven, let them cool and enjoy them. These cookies keep well for a few days in an airtight container.
