Today we bring another recipe from our friend Luz Maria Lagoa Vives. Hello friends. For the weekly cake, I have prepared with envelopes of custard or flan. The potax brand does not have added sugar, if you use another brand that does contain it, reduce the amount of sugar in the ingredients.

Ingredients of Custard sponge cake with thermomix
6 eggs (M)
225 gr sugar
1 sachet and a half potax flan (approximately 45 gr)
390 gr wheat flour (normal, all-purpose)
1 on chemical yeast (Royal type)
Dripping vanilla essence
180 ml milk
150 ml sunflower oil
Pinch of salt
Preparation of custard sponge cake with thermomix
We start by sifting the dry ingredients (flour, flan powder, yeast and salt), into the glass,
10 seconds / speed 8, set aside and reserve
We place the butterfly on blades, add the eggs and sugar,
5 minutes / 37° / speed 3.5, then 4 minutes / same speed but without temperature.
We add the essence and milk,
10 seconds / speed 3.5,
Then the oil,
6 seconds / speed 3.5.
We remove the butterfly and add the reserved dry ingredients,
12 seconds / speed 4.
We finish incorporating with the spatula.
We grease the mold and pour the dough.
We lightly tap the table to remove any air bubbles.
Oven previously preheated to 180° / heat up and down.
We bake for about 35/40 minutes / after checking the toothpick, it comes out clean.
We turn off and remove.
When 10 minutes have passed / we unmold and let it cool.
