Today we bring another recipe from our friend Luz Maria Lagoa Vives. Good friends, today I am sharing a recipe for a very creamy cake with the combination of chocolate mousse with cherries.

Ingredients for chocolate mousse cake with cherries with thermomix
BASE
170 grams cookies (the ones you have)
60 grams butter
CHOCOLATE MOUSSE FILLING
500 ml nats (to assemble)
300 grams dark chocolate (melt and desserts)
300ml milk
6 sheets neutral gelatin
20 cherries
JELLY LAYER RED FRUITS
150 grams red fruits
50 grams sugar
6ml lemon juice
2 sheets neutral gelatin
Preparation of chocolate mousse cake with cherries with thermomix
BASE
The cookies in the glass, 4/5 turbo strokes, we pour into a bowl and pour the melted butter, stir.
We line the base of the mold with baking paper and walls with acetate (failing that, baking paper), turn the cookies over and press with the back of a glass, put in the fridge, while we continue with the recipe
MOUSSE
We mount the 500 ml of cream at speed 3″5, reserve in the fridge
We put 3 gelatin sheets to hydrate in cold water.
We split 150 grams of the chocolate, heat 150 ml of milk, pour over the chocolate and stir until dissolved. Drain the gelatin and add it.
We remove. Remove 250 ml of the whipped cream from the fridge, add 2 or 3 tablespoons to the chocolate (we will do this step to equalize the temperature and not cut it), stir.
Now we pour all the chocolate into the cream, stir with enveloping movements.
We take the mold out of the fridge, pour half of this mousse; We place 10 halved cherries, we finish pouring the mousse. We took 45 min to the fridge to curdle a little
JELLY LAYER
We put to hydrate the gelatin in cold water.
All the ingredients in a glass
4 minutes / 80° C / speed 2
strain into a bowl. Drain the gelatin and add it, stir. past the
45 minutes / We take the cake out of the fridge and pour the puree over it, put it back in the fridge for about 45 min so that it sets a little so that we can put another layer of mousse.
After 45 minutes of curdling, we make another layer of mousse, in the same way as the first layer. We pour it over the cake. We take to the fridge about 6/8 hours or until set. We already unmold and finish decorating to taste
