Ingredients for Cheesecale Lemon Curd with Thermomix
BASE
170 grams cookies (the ones you have)
60 grams butter
FILLING
400 grams cream cheese
300 ml cream (to mount)
85 grams sugar
30 ml hot water
5 sheets neutral gelatin
20 grams sugar
35ml lemon juice
zest 1 lemon
LEMON CURD
1 egg + 1 yolk
75 grams sugar
85 ml lemon juice
75 grams butter
2 sheets neutral gelatin
Preparation of Cheesecale Lemon Curd with Thermomix
BASE ELABORATION
Cookies in the glass,
4/5 turbo strokes
Transfer to a bowl and pour the melted butter on top. we remove
We line the base and walls with baking paper, turn the cookies over and press with the back of a glass.
We take to the fridge, meanwhile, we continue with the recipe
FILLING
Butterfly in blades, semi-mount the cream with the 20 grams of sugar, at speed 3.5
Transfer to a bowl and reserve in the fridge.
Place the cheese with the 85 grams of sugar and the lemon zest, cream
40 seconds / speed 3’5
hydrate the gelatin in cold water (6/8 min), heat the water a little, drain the gelatin and add it to the water, stir, add to the glass together with the cheese,
10 seconds / speed 4
We overturned a bowl. Remove the cream from the fridge and add 2 or 3 tablespoons of the cheese to it (we will do this step to equalize the temperature and not cut it), now we pour the cream over the cheese and mix with enveloping movements.
Now add the strained lemon juice, stir.
We take the mold out of the fridge and pour the cream, smooth it out, we have been in the fridge for 2 hours.
LEMON CURD
We put to hydrate the gelatin in cold water, (6/8 min),
All the ingredients to the glass, with the exception of butter and gelatin),

Add the butter cubes,
3 minutes / 80°C / speed 4
Pour into a bowl and let cool a bit.
Drain the gelatin and add it.
Stir until completely diluted.
Take the cake out of the fridge and pour it on top.
We take back to the fridge for a minimum of 6 hours or until set. After time, we unmold and finish decorating.
In the filling, optionally, you can add a little bit of yellow coloring, this time I have dispensed with it
