Banoffee Cream Ingredients in Thermomix Cups
Cookie Base
- 8 Digestive type cookies
- 1 teaspoon light brown sugar
- 40 g salted butter, melted
Candy Layer
- 380 g thick caramel (about 1 cup)
- 90 g peanut butter (⅓ cup)
Banana Layer
- 2-3 bananas, peeled and sliced
Cream Layer
- 200 ml whipping cream
- 2 tablespoons icing sugar
- ½ teaspoon vanilla essence
Preparation of Banoffee Cream in Cups with Thermomix
Preparation of the Cookie Base
- Place the Digestive cookies in the Thermomix glass.
- Crush the cookies for 5 seconds at speed 8 until you obtain fine crumbs.
- Add the brown sugar and melted butter to the crumbs and mix for 10 seconds on speed 3.
- Reserve the mixture to use as a base in the cups.
Preparation of the Caramel Layer
- In a separate bowl, mix the thick caramel with the peanut butter until completely combined and forming a smooth mixture.
- Reserve the ready caramel for the next layer of the cups.
Preparation of the Whipped Cream Layer
- With the glass clean and dry, place the whipping cream, icing sugar and vanilla essence in the Thermomix.
- Whip at speed 3.5, watching until the cream forms firm peaks and is fluffy.
- Reserve the cream in the refrigerator until ready to assemble the cups.
