Ingredients
2 lobsters
3 tablespoons olive oil
70 grams of seaweed
500 grams of water
165 grams of coarse salt
The juice of half a lime
1 bay leaf
Preparation
When you have gathered all those ingredients, follow the steps that we indicate:
In the Varoma container, put the live lobsters as well as half of the seaweed and about 65 grams of salt.
Place the Varoma in the Thermomix and add the water, the bay leaf and a tablespoon of the seaweed to the robot’s glass. Program a
speed 1 / Varoma temperature / 20 minutes.
Remove the Varoma and let it cool.
Remove the contents of the glass, proceed to clean it and then add the rest of the seaweed that you have not used. Program a
speed 7/5 seconds.
Mix with the rest of the salt and pour this unique seaweed salt into a container.
Remove the meat from the lobsters and clean their heads. Mix the coral in a bowl with the lime juice and oil. Stir well and reserve this vinaigrette.
Serve by placing the lobster meat and pouring both the vinaigrette and the seaweed salt on top.
