Ingredients for Spaghetti with carrots and zucchini with thermomix
- 500 grams of spaghetti
- 2 medium zucchini
- 3 carrots
- 100 ml of white wine
- 250 ml of cooking cream
- half red chilli
- 4 garlic cloves
- 20 gr of virgin olive oil
- 80 grams of Parmesan
- 1 teaspoon dried oregano
- 1 teaspoon garlic salt
- a pinch of salt
- a pinch of pepper
Preparation of Spaghetti with carrots and zucchini with thermomix
- For the preparation of this recipe, certain steps are required that involve the use of the Thermomix and a pot with salt water in which the pasta will be cooked.
- First, you should bring a pot of salted water to a boil and then cook the pasta according to the manufacturer’s instructions.
- Meanwhile, proceed to grate the Parmesan cheese in the Thermomix

- and remove it to a bowl to serve it at the end.
- The next step is to grate the zucchini, peeled and cut into pieces that fit through the Thermomix bowl with
- two Turbo hits / 1/2 second.
- Once this is done, remove the zucchini to the basket and let the juices drain.
- Then proceed to grate the peeled carrot and into pieces that fit through the Thermomix jar, using two half-second Turbo strokes. The grated carrot is removed to the basket on top of the zucchini.
- Next, peel the garlic and chop it in the Thermomix glass together with the chilli pepper and 20 g of extra virgin olive oil for
- 5 seconds / speed 7

- Subsequently, add the grated and drained zucchini and carrot, and cook for
- 6 minutes / 120ºC / speed 1 / reverse turn
- Add the wine and let it evaporate without a beaker for
- 4 minutes / varoma temperature / speed 1 / reverse rotation
- Finally, in the pot on the stove, once the pasta has drained, it is cooked together with the cream, the vegetables sautéed in the Thermomix, and the reserved saucepan of cooking water. Add a teaspoon of garlic salt, another of oregano, salt, pepper, and half of the Parmesan cheese, and cook for another minute.
