This recipe has been sent by our friend Luz Maria Lagoa Vives.Well, a little cake for the breakfasts of the week. This week’s is whole grain zucchini and you go to rum… a wonder,,,, mega fluffy and delicious. I encourage you to try it.
The quantities I offer you, is for 25 cm diameter mold. If you want it smaller, reduce a part of the ingredients.
To calculate the quantities, it is very simple,,, each recipe, part of 4. Each ingredient has to be calculated. This one in particular, I’ll give you an example with one of the base ingredients.
Flour- 350 gr.
Then it would be dividing that amount by 4. It would give us 87.5 grams.that would be one part of flour. From there,,, multiply that amount by the parts of more or less that we want to add or subtract. The specific for those who do not know. Well, let’s get to the mess

Ingredients of whole grain zucchini and raisin cake with thermomix
- 5 eggs
- 250 grams sugar
- 350 grams whole wheat spelt flour
- 1 about chemical yeast
- 1 teaspoon baking soda
- 1 teaspoon ginger
- The tip of a teaspoon nutmeg
- 2 teaspoons cinnamon
- Pinch of salt
- Lemon zest
- 260 ml sunflower oil
- 425 grams zucchini in pieces (c. P)
- 125 grams raisins macerated in rum

Preparation of whole grain zucchini and raisin cake with thermomix
- Chop the lemon peel, without any white part,
- 15 seconds / progressive speed 5-8
- Add the dried ones (flour, yeast, spices and salt),
- 1 minutes / speed 6
- We set aside and book
- Butterfly on blades, eggs and sugar in a glass,
- 6 minutes / speed 3’5
- Remove the butterfly and add the oil and zucchini, 30 seconds / speed 6.
- Then the reserved dry
- 25 seconds / speed 6
- Add the raisins and integrate with the spatula.
- We spray mold with mold release spray.
- We dump the dough
- Oven previously preheated to 180°, heat up and down
- Bake for about 45 minutes / after checking the toothpick, it comes out clean
- Turn off and remove to cool on a wire rack
