Salmorreta ingredients with thermomix
- 500 grams of tomato
- 6 dried peppers
- 25 grams of minced garlic
- 80 grams of extra virgin olive oil
- Salt
Preparation of Salmorreta with thermomix
- cut the ñoras in half and remove the seeds and put them in a glass of water to hydrate for about 3 hours
- when we have hydrated the ñoras we start the recipe
- cut the tomatoes into pieces and reserve
- With a sharp knife we remove the meat from the ñoras and reserve
- Cut the ñoras in half, remove the stalk, extract the seeds and soak in warm water for a minimum of 3 hours. You can leave them overnight for the next day.
- Add 50 grams of oil to our Thermomix bowl and program
- 15 minutes / 120°C / ladle speed
- When we see that the oil is hot, add the garlic cut into slices through the mouth
- once finished we add another 30 grams of oil and add the meat of the ñoras that we had reserved and program again
- 3 minutes / 120°C / ladle speed
- Add the reserved cut tomato and salt and program
- 35 minutes / 100°C / speed 1
- when we finish we grind
- 30 seconds / progressive speed 6-7-8
- and our brine will be ready
- we can keep it in a glass jar in the fridge or even freeze it
