For the mass:
3 egg yolks and 1 white
152 grams of milk
51 grams of butter
A little bit of salt
51 grams of sugar
400 grams of bread flour
20 grams of fresh yeast
For the cream:
100 grams of bread flour
500 grams of water
Some food coloring
262 grams of sugar
An envelope of vanilla sugar
For the chocolate coating:
61 grams of cream
21 grams of butter
100 grams of chocolate fondant
Preparation
When you have gathered all those ingredients, follow the steps below:
Start by preparing the dough. To do this, add the butter, milk and sugar to the robot’s glass. Program a
speed 2 / 37º / 1 minute.
Then add the yeast and the yolks. Program a
speed 4/10 seconds.
Then add the salt and flour. Mix to
speed 6/10 seconds.
Then program
spike speed / 2 minutes.
Let the dough rest for about 10 minutes and after that time go back to programming
spike speed / 1 minute.
In a round mold, previously greased, pour the contents of the glass and spread it well. Cover it with a kitchen towel and let it sit for 2 hours in the off oven.
After that time, take it out of the oven, paint the dough with the egg white and put this appliance to work at about 200º. After a few minutes, put the mold in the oven and keep it at that temperature for about 20 minutes.
To make the filling, put all the ingredients in the glass and program to
speed 4 / 100º / 8 minutes.

For the coverage, pour the chocolate and cream into the glass and program at
speed 2 / 90º / 5 minutes.
Then add the butter and put the robot to work

Now all that remains is to mount the cream and chocolate wedges. To do this, cut the dough in half and fill it with about ¾ parts of cream.
