A fresh cream that you really want in summer, but that in autumn or at the beginning of spring is not bad at all, simply when you feel like something light and fresh.
This cream besides being very rich is very healthy. The melon is a fruit with a high water content, so it is perfect for keeping our body hydrated in any season of the year and in good shape.
Don’t wait any longer, get the ingredients ready, put on your apron and hands to the thermomix.
300 grams of melon (without pips or seeds and without skin).
300 grams of peeled cucumber.
1 medium onion.
2 Greek yogurts (can be light).
The juice of one lemon.
50 grams of virgin olive oil.
10 mint leaves or fresh mint (some are to decorate the dishes)
1 pinch of salt
1 pinch of sugar
Serrano ham strips (optional)
Place in the glass of the thermomix to crush the melon, cucumber and onion cut into pieces, together with the lemon juice, program.
20 seconds / Speed 6
Then, add the Greek yogurts, the mint or fresh mint leaves, the olive oil, the pinch of salt and the pinch of sugar.
20 seconds / Progressive speed 5
Repeat the shake if necessary to lighten the cream and leave it without lumps, program.
10 seconds / Progressive speed 5-10
The result is a mix between sweet and salty, soft and creamy, with a perfect touch of acidity provided by the lemon and it goes perfectly with the cucumber.
Refrigerate for about 10 minutes and serve.
You can present it as a main dish or appetizer, in individual soup dishes and decorate by adding a few strips of Serrano ham and a clean and fresh mint or mint leaf to each of the dishes.
Another option is to serve in cold shots for appetizers. Thus, it has an original and refreshing starter for parties and meetings.
