Ingredients of Cheesecake with Irish cream without oven with thermomix

For the crust:

170 g Digestive biscuits
a pinch of salt
45g unsalted butter, melted
2 tablespoons (30 ml) Irish cream (Baileys)

For the cream cheese layer:

225g cream cheese
80 g icing sugar
80 ml Irish cream (Baileys)
1 teaspoon vanilla extract
120 ml heavy cream

Dressings (optional):

chocolate chips
Caramel sauce
chocolate sauce
Whipped cream

Preparation of cheesecake with Irish cream without oven with thermomix

Prepare the crust:
Put the Digestive cookies in the Thermomix glass. Grind 10 sec / speed 7 until obtaining a fine powder.
Add the salt, melted butter and Irish cream. Mix 10 sec / speed 4 until uniform.
Pour the mixture into an 18cm springform pan lined with baking paper. Press firmly with the back of a spoon to form the base.
Place the mold in the freezer while you prepare the cheese layer.
Prepare the cream cheese layer:
Place the butterfly in the glass. Add the cream cheese, confectioners’ sugar, Irish cream and vanilla extract. Beat 30 sec / speed 3 until smooth and creamy.
Remove the butterfly. Add the heavy cream and whip 30-40 sec / speed 3.5 or until firm peaks form.
Pour the cream cheese mixture over the prepared base in the mold. Spread it evenly with a spatula.
Cool:
Cover the mold with plastic wrap and refrigerate for at least 3 hours or overnight to set.
Decorate and serve:
Decorate the cake with chocolate shavings, dulce de leche, chocolate sauce or whipped cream, depending on your preference.
Serve cold and enjoy.

Grades

You can adjust the amount of sugar according to your preference.
Make sure all ingredients are at room temperature before starting for a more homogeneous mixture.
