Many of us love bread and a great effort is made to try all the existing varieties to distinguish which one would be the favorite, in my case there are many, but since I tried the bagels I have become addicted.

500 grams of pastry flour
21 grams of fresh yeast
2 tablespoons brown sugar
2 tablespoons olive oil
2 tablespoons of honey
3 teaspoons of salt
1 tablespoon sesame and/or poppy seeds

Preparation of Bagels with thermomix
To begin the preparation of these delicious Bagels with thermomix, pour the sugar with 300 grams of water and the fresh yeast into the Thermomix bowl, program.
3 minutes / Temperature 37° / Speed 1.
Let the yeast sit to activate, about 10 minutes.
After the resting time, add the flour, the tablespoons of oil and 2 teaspoons of salt, program.
2 minutes / Knead.
When the ingredients are integrated, remove the dough from the Thermomix bowl, form a ball, place it in a bowl, cover it and let it rest for 1 hour in a warm place so that the yeast doubles its volume.
After the rising time, knead again with your hands and form 8 balls of similar sizes.
Form the bagels by making holes in the center of the dough balls, with the help of the handle of a wooden spoon and turning until the desired size is obtained.
Arrange a baking tray lined with parchment paper and place the bagels on it, leaving enough space between them as they will increase in volume due to the effects of the yeast.
Cover them with a clean kitchen towel and let them rest for 10 minutes to increase their volume once again.
While this is happening, pour plenty of water into a pot and bring it to a boil.
Add the tablespoons of honey and 1 teaspoon of salt, and let it simmer for a few minutes.
Turn on the oven and preheat to 220°C.
Once the resting time of the bagel dough is over, with the pot of boiling water ready to pre-cook the bagels and carefully add the bagels, in batches, to the pot of boiling water.
Let them simmer for 45 seconds, turn them over and let them simmer for another 45 seconds.
Remove them from the pot with a slotted spoon, let them drain and arrange them on the baking tray. Repeat the operation once or twice, it all depends on the size of the pot and the number of bagels that you pre-cook in batches.
When all the bagels are boiled or precooked, sprinkle sesame or poppy seeds on top, put them in the oven and bake them for 20 minutes at 220°C.
When they are ready you will notice a wonderful and tempting golden and fluffy bread.
