Ingredients for light hazelnut cream with thermomix
- 50 ml milk
- 150 g hazelnut cream (you can use clear hazelnut cream or similar)
- 400 ml of whipping cream (with at least 35% fat)
- 50 g icing sugar
- 1 sachet of cream stabilizer (Sahnesteif)
- 50 g hazelnuts
- 1 tablespoon optional cocoa powder
Preparation of light hazelnut cream with thermomix
- Heat the milk with the hazelnut cream
- Place the milk and hazelnut cream in the Thermomix glass.
- Program 2 minutes at 60°C and speed 2 to heat and mix well.
- Pour the mixture into a bowl and let it cool. If you want a darker cream, add the tablespoon of cocoa powder and mix well.
- Whip the cream
- Wash and dry the glass completely to make sure there is no grease left.
- Place the butterfly on the blades. Add the cream, icing sugar and cream stabilizer.
- Whip the cream at speed 3.5 without time (watch for the sound and texture; stop when it is firm but without overdoing it).
- Reserve the whipped cream in a large bowl.
- Add the hazelnut mixture
- Once the milk and hazelnut cream mixture is cold, gradually fold it into the whipped cream with circular movements, using a spatula to maintain the aerated texture.
- Add the hazelnuts
- Place the hazelnuts in the clean glass and chop them for 5 seconds at speed 5.
- Add the chopped hazelnuts to the cream, mixing gently, or use them as a final decoration.
- Presentation
- Serve the cream in individual glasses or a large bowl. Decorate with chopped hazelnuts and, if you wish, a little sprinkled cocoa.
