Some time ago, the wonderful Ferran Adrià, one of the best chefs in the world, created a recipe that, just by presenting it, sparked controversy. Similar to the deconstruction of some dishes in the past, this one is no less controversial: liquid croquettes!! Sacrilege!!!

Liquid Croquettes by Ferran Adrià with Thermomix
Ingredients
- 700 grams of ham broth
- 300 grams of milk
- 70 grams of butter
- 30 grams of oil
- 65 grams of flour
- 100 grams of chopped Iberian ham
- Croutons
Instructions
- First, we cut the Iberian ham into small cubes and set it aside. We bring the ham broth and milk to a boil.
- 5 minutes / Varoma temperature / speed 1
- Then we set it aside in a bowl or pot. We add the butter and oil and program:

- We add the flour and program:
- 2 minutes / Varoma temperature / speed 4
- We add the ham broth, milk, and ham cubes again and program:
- 5 minutes / Varoma temperature / speed 1
- Next, we serve it in bowls, sprinkle the croutons on top, and they are ready to eat – simply like drinking a croquette.
