Apricot Cheesecake Ingredients with Thermomix
60 g soft butter, cut into pieces, plus a little more for greasing
150g wholemeal shortbread biscuits, broken into large pieces
125g sugar
1 pinch of cinnamon
480g canned apricots, drained
600 g cream cheese
20 g vanilla sugar, homemade
20 g almond liqueur (e.g. Amaretto)
2 eggs
30g flour
2 tablespoons of flaked almonds
Powdered sugar to sprinkle
Preparation of Apricot Cheesecake with Thermomix
Line a removable mold (Ø 20 cm) with baking paper and grease the edges. Preheat the oven to 200°C.
Place the cookies, 15 g of sugar, cinnamon and butter in the Thermomix glass and blend for 8 seconds. / Speed 8.
Pour the cookie mixture into the prepared pan, press to form an even base, and top with about ⅔ of the apricots. Wash the Thermomix glass.
Add the remaining apricots to the Thermomix glass, blend for 8 seconds. / Speed 5 and push down with the spatula.
Add the cream cheese, 110 g of sugar, vanilla sugar, almond liqueur, eggs and flour to the Thermomix glass and mix for 20 seconds. / Speed 4.5.
Pour the cream cheese mixture over the biscuit base and bake the cheesecake for 10 minutes (200°C).
Reduce the oven temperature to 160°C, sprinkle the cheesecake with flaked almonds and bake for a further 50 minutes (160°C) until ready. Let the cheesecake cool in the oven with the door open for 2 hours, then carefully remove the edge of the springform pan and let cool completely in the refrigerator.
Sprinkle the apricot cheesecake with icing sugar and serve.
