For the quinoa:
220 grams of quinoa seeds
800 grams of water
1 teaspoon salt
2 teaspoons of extra virgin olive oil
For the vinaigrette and vegetables:
The juice of 2 large lemons (approximately 100 grams) can substitute lemon for vinegar
40 grams of extra virgin olive oil
2 red tomatoes, diced
1 red bell pepper
1 green bell pepper
1/2 onion
80 grams of black olives
½ teaspoon ground cumin
½ teaspoon pepper
Salt
For the aromatic herbs:
a few leaves of parsley (without the stem)
a few coriander leaves (without the stem)
Preparation
To begin the preparation of this exquisite quinoa salad, you must wash the quinoa seeds very well, and this is done by placing them in a bowl with a little water and draining them in a mesh strainer, doing this procedure a couple of times to remove any residue.
Then, pour these already cleaned quinoa seeds into the Thermomix bowl along with the measure of water, a little salt and olive oil, program.
Once the quinoa is ready to cook, drain it again through the strainer and reserve.
On the other hand, wash and dry the Thermomix bowl very well and dispose of the coriander and parsley leaves, program.

Then, pour the red and green peppers cut into pieces together with the juice of the lemons, the olive oil, the onion or spring onion, the ground cumin, salt and pepper (at this point if you prefer you can also crush the black olives , or just cut them into slices and add them at the end) schedule.
