Pestiños ingredients with thermomix
For the mass:
260 grams of flour
1 teaspoon chemical yeast
1 tablespoon lemon/orange zest
75 grams of mild olive oil 0.4
3 nails
1 grain anise
75 grams of sherry wine
1 pinch of salt
For the honey topping:
200 grams of honey

Preparation of Pestiños with thermomix
We will start by pouring the aniseed grain, the grated fruit, the clove, and the oil into the glass of our thermomix to aromatize the oil.
we program 5 minutes/90º/ spoon speed
let the temperature drop to 40º +-
remove the cloves from the Thermomix bowl and add the flour, yeast and wine
We program 5 seconds, speed 6.
It’s time to knead the mixture for what we programmed
5 minutes, spike speed.
The dough must be very oily so it should be very elastic and not sticky.
If it is sticky we can add a little flour and return to
schedule 1 minute spike.
Make a ball, cover with cling film and leave to rest for 30 minutes.

It is better not to fill the pan with our pestiños too much to be able to turn them correctly, it will take a little longer but they will be much better
When removing them, put them on an absorbent paper to remove excess oil.
