may look similar to a roscon de reyes but it is a much simpler cake, made with a syrup, with much fewer ingredients than the roscón de Reyes
It can also be filled with cream or any other type of cream.

For the sourdough:
130 grams of flour
10 grams of fresh pressed yeast
70 grams of whole milk
½ teaspoon sugar
For the mass:
70 grams of whole milk
70 grams of butter at room temperature
120 grams of sugar
2 eggs
20 grams of fresh pressed yeast
450 grams of flour
1 pinch of salt
For the syrup:
150 grams of sugar
120 grams of water
a packet of vanilla sugar
2 tablespoons liquor (optional)
Preparation of crown of the almudena with thermomix
To start the recipe we will start by making the sourdough for which we will have in our Thermomix bowl the flour, yeast, milk and sugar in the measures that we have in the ingredients for the sourdough and program

When you finish, put it in a bowl, cover it with a little warm water and wait for it to double its volume.

leave in the glass until the dough doubles its volume, this will take about 2 hours
once we have the dough that has doubled its volume, we put a little sprinkled flour on a surface and put the dough on top of it, and we shape the ball into a crown, as if it were a roscón de reyes, leaving a good central hole that later its volume will speak again in the mass
we put our crown on a baking tray lined with parchment paper and let it rest again until it doubles its volume again
We prepare the syrup
To prepare syrup, we put the vanilla, sugar and water in our Thermomix bowl and program

Preheat the oven to 200º
and spread with syrup while crowning it on top with a brush, we can also put pastry cream or another type of cream on top
