Ingredients

  • 100 grams of sunflower oil.
  • 60 grams of canned cockles.
  • 1 egg yolk
  • 20 grams of lemon juice.
  • 5 sprigs of fresh parsley
  • 1 pinch of salt

Preparation

  1. To start our recipe we will chop the parsley, for which we will put it in our Thermomix bowl and program
  2. 2 seconds / speed 7
  3. Add the yolk, lemon juice, salt and cockles and program
  4. 2 seconds / speed 5
  5. We place the butterfly on the blades and mix
  6. 1 minute / speed 4
  7. while we pour the oil slowly over the lid, letting a very fine thread fall while mixing and thus achieve the emulsion
  8. We put the content in a bowl and our cockle mayonnaise is ready
  9. if we do not consume immediately, we store in the refrigerator
