Preparation of Christmas Dessert with Toasted Almonds in Thermomix

1. Step 1: Whip the cream
2. Place the butterfly on the blades.
3. Add the cold cream to the Thermomix glass. Whip the cream at speed 3.5 without programming any time. Constantly monitor to avoid cutting yourself.
4. Once whipped, remove the cream and keep it in the refrigerator.
5. Step 2: Prepare the cream
6. Without washing the glass, add the mascarpone, cottage cheese, sugar, vanilla sugar and drops of almond flavor. Mix for 20 seconds at speed 3 until a homogeneous mixture is obtained.
7. Add the reserved whipped cream and mix gently with the spatula to maintain the texture. Store in the refrigerator.
8. Step 3: Roasted almonds
9. Add the sugar, vanilla sugar, cinnamon and water to the glass. Program 4 minutes, 100°C, speed 2, to dissolve the sugar.
10. Add the almonds and cook for 12 minutes, 120°C, reverse rotation, spoon speed. Stir constantly with the spatula if necessary to ensure the almonds caramelize evenly.
11. Spread the caramelized almonds on lightly greased baking paper and let them cool completely.
12. Step 4: Assembling the dessert
13. Cut the vanilla crescents into small pieces and place them in the bottom of individual glasses.
14. Add the cream on top of the crescents.
15. Decorate with the cooled caramelized almonds.
