Ingredients for Creamy Potato Soup with Thermomix
- 800 g potatoes (floury, peeled and cubed)
- 1 onion
- 2 cloves of garlic
- 2 tablespoons olive oil
- 1 liter of vegetable broth
- 200 ml of cream (can be vegetable)
- 1 teaspoon dried marjoram (optional)
- Salt and pepper to taste
Preparation of Creamy Potato Soup with Thermomix
- Previous preparation:
- Peel and cut the potatoes into small cubes.
- Peel and chop the onion and garlic.
- Stir-fry:
- Place the onion, garlic and olive oil in the Thermomix glass.
- Program 5 seconds / speed 5 to chop the ingredients.
- Then, sauté for 7 minutes / 120°C / speed 1.
- Cooking the potatoes:
- Add the potato cubes to the glass along with the vegetable broth and marjoram (if using).
- Program 20 minutes / 100°C / speed 1.
- Puree:
- Once the potatoes are tender, blend the mixture for 1 minute / progressive speed 5-10, until you obtain a creamy texture.
- Add cream and adjust consistency:
- Add the cream to the glass. Season with salt and pepper to taste.
- Mix by programming 30 seconds / speed 4. If the soup is too thick, add more broth or water and mix again.
- Serve:
- Ladle the soup into bowls and garnish with fresh chopped parsley.
- Serve with fresh baguette or crispy croutons.
