350 grams sugar
500 grams ground almonds
lemon zest (yellow part only)
2 or 3 eggs (depending on size)

grated coconut
chocolate powder

Preparation of Panallets with thermomix
we put the almonds, the lemon zest and the sugar in the thermomix, mix without time at spike speed (1 minute more or less).
incorporate the first egg through the mouthpiece and mix well, then add the second and continue mixing, if the dough detaches well from the walls it will be ready, if not add another egg.
Let stand in the fridge overnight.
Pine nut pancakes:
We take a little dough, mix it with pine nuts and make small balls. Then we paint them with egg.
Almond pancakes:
We take a little dough and form a figure (to taste) we coat it with the ground almonds and paint with egg.
coconut pancakes:
We mix the part of the dough that we are going to use with the grated coconut and we shape it like a ^mountain^ we paint with egg only the tip.
Chocolate pancakes:
We take the part of the dough that we are going to use and mix it with the cocoa powder and form balls, (I do not paint these with the egg).
We put the tray in the oven for 12 minutes at 220 degrees.
