📋 Ingredients:
🍓 Strawberry puree:
500g mixture of strawberries, 30g of icing sugar (optional, depending on the sweetness of fruits) and 1 tablespoon of lemon juice for 30 seconds at speed 10. Reserve in a bowl.
🍓 Mascarpone cream:
Clean and dry the bowl. Place the rods, add 5 egg yolks, the seeds of half vanilla pod and 100g of white sugar. Beat for 4 minutes at speed 3.5.
Remove the rods and add 500g from Mascarpone. Mix for 30 seconds at speed 4. Reserve in a bowl.
Wash and dry the bowl, place the rods again and add 5 egg whites. Beat for 3 minutes at speed 3.5.
Carefully incorporate, three times, the whites mounted to the mascarpone cream, until obtaining a soft and spongy texture.
🍓 Mounting:
Place the biscuits soaked in strawberry puree at the bottom of the mold. Add a layer of mascarpone cream and distributes beautiful strawberry pieces.
Repeat the process.
In the last layer of cream, pour a little strawberry puree in threads and create a marble effect with a rod for an incredible finish. 🤩
Refrigerate for at least 4 hours (ideally all night).
It serves cold and enjoys the rest of the puree. 🍓🤤
