- 1 clove of garlic
- 20 g extra virgin olive oil
- 15 g tomato concentrate
- 100 g cream
- 50 g of processed cheese
- 350 g cherry tomatoes cut in half
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 0.5 teaspoon salt
- 4 pinches of freshly ground black pepper
- 1 tablespoon cornstarch (cornstarch)
- 50 g of water
- 400 g spaghetti
- 375 g mozzarella, cubed
- Fresh basil leaves to decorate
Preparation of Spaghetti with Tomato and Mozzarella with Thermomix
- Step 1: Prepare the garlic
- The first step is to chop the garlic. Place the garlic clove in the Thermomix glass and chop it for 2 seconds in Turbo mode. Then, with the help of the spatula, push the pieces to the bottom of the glass so that the garlic is well distributed.
- Step 2: Sauté the garlic with the tomato concentrate
- Add the 20 g of extra virgin olive oil and the 15 g of tomato concentrate. Program the Thermomix for 2 minutes, at 100°C and speed 2. This step will allow the flavors of the garlic and tomato to integrate evenly, providing a delicious base for the sauce.
- Step 3: Add the cream and cheese
- Next, add the cream and melted cheese to the glass. It is at this point that the sauce begins to take on a creamy and rich texture. - Dissolve the cornstarch in 50 g of water and add it to the sauce through the Thermomix lid while it continues to cook. This will help thicken the mixture and give it a perfect consistency. Cook everything together for another 10 minutes at 120°C on speed 2.
- Step 5: Cook the spaghetti
- While the sauce finishes cooking, cook the spaghetti in a large pot with plenty of salted water, following the package directions. It is important that the pasta is al dente, which means cooked but firm to the bite. Once ready, drain them and run them briefly under cold water to stop the cooking.

- When the sauce is ready, mix it for 10 seconds on speed 8 to obtain a smooth texture. Next, add the mozzarella cubes and pour the sauce over the spaghetti. Mix well so that the flavors infuse into the pasta and the mozzarella melts slightly, creating a creamy and delicious texture.
