This recipe has been sent by our friend Luz Maria Lagoa Vives. Hi guys, today I bring you some delicious cupcakes, filled with cream cheese and covered in a thin layer of crispy puff pastry. They are typical of Teruel, and have a history, based on the legend of an impossible LOVE, Juan and Isabel, the lovers of Teruel.
Ideal to share and enjoy with a rich and warm coffee, which is already appetizing. As always, a pleasure to be able to share my work, I hope you like it and I encourage you to do so. ??

PUFF PASTRY
You have 2 options in lining the molds or tartlets
OPTION 1
Stretch the puff pastry with the help of a rolling pin, make cuts of the dough with the help of a glass or similar, to the circumference of the chosen mold
OPTION 2
Stretch the puff pastry with the help of a rolling pin. Roll up the dough.
Make 18 partitions 1 cm thick. (this is the option I have used), go molding the dough with the help of your fingers, from the inside out.
Either of the two options, keep the tartlets in the fridge. Meanwhile, we continue with the recipe
1FILL
Turn on the oven (at least 15 min before baking), at 200°C / heat up and down
We introduce the ingredients to the glass,
5 minutes / 90°C / speed 3.
Later,
5 seconds / speed 9.
Take the tarts out of the fridge and fill them, being careful not to overfill them. We bake about 20/25 min (the surface has to be golden). We turn off, remove, let it temper to be able to unmold.
Unmold and let cool on a wire rack. Once cool, sprinkle with icing sugar
