Ingredients for Lemon Mousse with Red Fruits in Thermomix
For the lemon mousse:
- 330 ml (1 1/3 cup) whipping cream (minimum 35% fat)
- 60 g (1/4 cup) icing sugar
- 1 lemon curd recipe (see below) or 340 g purchased lemon curd
- Fresh red fruits (blackberries and/or blueberries, optional)
For the lemon curd:
- 150 g (3/4 cup) white sugar
- 120 ml (1/2 cup) fresh lemon juice (about 2 large lemons)
- 1 tbsp lemon zest
- 2 large eggs
- 2 egg yolks
- 115 g (1/2 cup) butter, cut into small pieces
Preparation of Lemon Mousse with Red Fruits in Thermomix
- Prepare the lemon curd
- Place the sugar, lemon juice, zest, eggs and yolks in the Thermomix glass. Mix 10 seconds at speed 4.
- Add the butter in small pieces. Cook 10 minutes, 80°C, speed 2.
- Once ready, pour the lemon curd into an airtight container and refrigerate for at least 3 hours to thicken.
- Prepare the lemon mousse
- Clean and dry the Thermomix glass well. Place the butterfly and pour the cold cream into the glass. Whip the cream for 1-3 minutes at speed 3.5, watching until it forms firm peaks. Add the icing sugar in the last seconds.
- Remove 3/4 cup of whipped cream and reserve for decorating.
- Add 3/4 cup of lemon curd to the rest of the whipped cream and mix gently with circular movements to obtain the mousse.
- Mounting
- Divide the remaining lemon curd among five clear glasses to highlight the layers.
- Place the mousse in a pastry bag (optional) and distribute evenly over the lemon curd in each glass.
- Add a generous spoonful (2-3 tablespoons) of the reserved whipped cream on top, decorating if desired with a piping tip.
- Finish and serve
- Refrigerate the glasses until ready to serve. Just before bringing them to the table, decorate with fresh red berries. Enjoy this sophisticated and easy dessert!
