Yes, a fumet that, as you will know if you like cooking or if you are a faithful follower of the “Masterchef” program, is a concentrated fish and seafood broth that is prepared with remains of both types of food and bones, but never viscera.
Ingredients
- To begin with, what you need is to gather the following products in the kitchen that will allow you to obtain a fumet to prepare a dish for 4 people:
- 1 leek.
- 1 onion.
- 800 grams of water.
- 150 - 200 grams of shrimp shells and heads.
- They can also be made from prawns, carabinieri, crayfish...
- That's up to you.
- 25 grams of olive oil.
- 150 grams of what would be leftover fish.
- This can be monkfish, hake... whatever you like.
- Parsley.
- Salt.
Instructions
- Now it's time to put on your apron and follow these directions:
- Peel the leek and the onion. Cut them into small pieces.
- In the glass of the robot you must add both the leek and the onion as well as the oil and the shells and heads of the prawns. Then program it at speed 4 and Varoma temperature for about 3 minutes.
- Add the water, some parsley, the remains of the fish and the salt. Set the Thermomix at speed 2 and temperature 100º for about 8 minutes.
- Afterwards, you will have your good fish and seafood fumet ready.
- All you have to do is strain it and use it as a concentrated broth to prepare a stew.
