Giant Hamburger Brioche Bread with Thermomix

Recipe from our friend and collaborator Luz Maria Lagoa. Enjoy a spectacular homemade brioche bread, tender, spongy and with a unique touch thanks to the roasted pumpkin, ideal for your best gourmet burgers.

A golden, fluffy and healthy touch

The addition of roasted pumpkin puree not only adds incredibly tender texture and long-lasting moisture to the brioche bread, but also gives it a spectacular natural golden color without the need for artificial colors.

The secret of perfect kneading with Thermomix

Thanks to the speed control and the spike function of the Thermomix, we manage to develop the gluten optimally. Respecting the resting times and gradually incorporating the butter will guarantee a brioche worthy of the best artisanal bakery.

INGREDIENTS

  • 🌾 500 gr strong flour
  • 🍞 14 gr fresh yeast
  • 🎃 150 gr roasted pumpkin puree
  • 🥚 1 Egg
  • 🍯 40 gr honey
  • 🟤 20 gr brown sugar
  • 🥛 175 ml milk
  • 🧈 45 gr butter (TA)
  • 🧂 10 gr salt
  • 🍳 1 beaten egg (for brushing)

PREPARATION

We temper the milk, add the sugar and the crumbled yeast, stir and let it rest for 15 minutes.

We put the egg, honey, pumpkin puree, and milk in the thermomix glass, 10 sec V-4.

Then, we add the flour and salt, 10 sec V-4.

We let it rest for 20 minutes so that the flour particles are hydrated.

Then, we knead for 2 min, V- spike.

Next, we add the butter in small cubes while we continue kneading.

When all the butter has been incorporated, stop and let it rest for 5 minutes.

Then, we will do 3 kneadings of 2 minutes each with their respective 5-minute breaks between kneading and kneading.

Pour the dough into a lightly greased bowl and cover.

We let it increase in size (1 hour / 1h 30 min, always depending on the temperature of your kitchen).

When it has doubled in volume, we degas (remove the air created after rising), kneading for a minute by hand.

We weigh the dough and divide into 8 portions.

We ball each portion and place it on a tray lined with baking paper.

We flatten each ball slightly, cover and let them rise.

When they have grown, brush with beaten egg.

Oven previously preheated to 180°, heat up and down, bake for about 20 minutes until the desired golden brown is achieved.

We turn off and remove to cool on a rack. ONLY LEFT TO ENJOY, BONUS!
