Cherry Cheesecake Ingredients with Thermomix in glasses

2 bags (340 g each) frozen sweet cherries.
1/4 cup honey.
1/4 cup whiskey (optional).
2 tablespoons of butter.
Juice of half a lemon.
1 teaspoon cornstarch.
1/4 teaspoon almond extract.
2 packages (225 g each) of cream cheese.
1 can (396 g) sweetened condensed milk.
12 lotus cookies
1/4 cup sliced almonds.

Preparation of Cherry Cheesecake with Thermomix in glasses

Prepare the cherry topping:
Place the cherries and honey in the Thermomix glass. Program 8 min/100°C/speed 1.
If using whiskey, add it and mix for 1 min/100°C/speed 1.
Add the butter and mix 30 sec/speed 3 until melted.
Mix the lemon juice with the cornstarch in a separate container. Pour this mixture into the glass and cook 2 min/100°C/speed 1 until thickened.
Add the almond extract and mix 10 sec/speed 2.
Transfer the topping to a bowl, let cool to room temperature, cover with film and refrigerate for a few hours.
Prepare the cookie base:
Crush the cookies in the Thermomix for 10 sec/speed 5. If you prefer a wetter base, add 2 tablespoons of melted butter and mix 10 sec/speed 4.
Place a layer of the crushed cookies in the bottom of small glasses or wine glasses.
Prepare the cheesecake filling:
Place the cream cheese and condensed milk in the clean glass. Beat 1 min/speed 4 until the mixture is fluffy.
Fill a pastry bag or plastic bag with the filling and cut off the tip. Serve a generous portion over the layer of cookies in each glass.
Assemble the shooters:
Add a large spoonful of the cherry topping over the cheesecake filling.
Decorate with sliced almonds on top.
