Ingredients

🍿 1 package of popcorn (microwave)
🍬 300 g of sugar
💧 1080 g of water
🍯 20 g honey
🧪 1 teaspoon baking soda
🥛 450 g whole milk
🥣 120 g cream (35% MG)
🥛 50 g milk powder
🥚 6 egg yolks
🍮 200 g pastry dulce de leche

Important note

The complete recipe can be made entirely in Thermomix TM6 or TM7 using Cookidoo’s guided recipe for caramel popcorn (includes modes like “Sugar Points” and “Thicken”).
If you use TM5 or TM31you must prepare the caramel in a separate saucepan and then continue with the ice cream base in Thermomix.

Step by step preparation

1Prepare the caramel popcorn

Follow the specific Cookidoo recipe to make the caramel with sugar, water, honey and baking soda. Add the popcorn and caramelize it. Reserve part to mix at the end and part to decorate.

2ice cream base

In the glass, add the whole milk, cream, milk powder and yolks. Use the mode “Thicken” (or cook at 90°C for 8–10 minutes / speed 3) until smooth and slightly thick.

3Add dulce de leche and caramel

Add the dulce de leche and part of the liquid caramel from the popcorn. Mix 30 seconds / speed 4 until completely integrated.

4Crush and cool

Blend 30 seconds / speed 8 for a very fine texture. Pour into a container and chill in the refrigerator for several hours (ideally overnight).

5Butter the ice cream

Pour the cold mixture into the refrigerator accessory if you have one. If not, freeze in a container and stir every 30–45 minutes for 3–4 hours.

6Incorporate the crunchy touch

Add reserved caramel popcorn pieces just before you finish buttering or when serving.

  • ❄️ Cool the base very well before freezing (minimum 4 hours).
  • 🍮 Use thick pastry dulce de leche for more intensity.
