Ingredients of Brioche bread with pumpkin with thermomix
500 gr strong flour
14 g fresh yeast
175 ml milk
1 egg
40 gr butter (TA)
150 g roasted pumpkin puree (this is the best way to prevent it from releasing water)
90 gr sugar
40 gr honey
Pinch of salt
70 g pumpkin seeds (lightly toasted)
Preparation of brioche bread with pumpkin with thermomix
We temper the milk and add the crumbled yeast, stir.
In the thermomix glass, add all the ingredients, except the butter,
10 seconds / speed 4,
We let it rest for 20 minutes so that the flour particles are hydrated.
Then, while we knead, we add the butter in small cubes, when it has all been integrated, we stop for 5 minutes.
Then, we will do 3 kneadings of 2 minutes, with a 5-minute rest between each kneading.
Pour the dough into a lightly greased bowl and cover.
We let it increase in volume (approximately 2 hours)
Then, we degas (remove the air created after rising), kneading for a minute by hand.
FORMED AND BAKED
We can do it as I have done on this occasion. We weigh the dough and divide it into 3 portions of the same weight.
We make each portion into balls and cover for 10 minutes so that the dough relaxes.
Then, we stretch each ball and roll it.
We place the previously greased mold in it.
The other forming option is to do it in one piece, the next one I make, I will do it like this.
Visually it is more beautiful, but what is truly important is inside (it is only mere aesthetics).
We let the dough reach almost the edge (approximately 1 hour)
Oven preheated to 170°, heat up and down
We spray our bun with water.
We open the oven and also spray its interior
We introduce our bread, we bake for about 35 minutes.
We turn off and remove to cool on a rack.
When 10 minutes have passed, we unmold and let it cool completely.
