Ingredients for braid stuffed with apple with thermomix
MASS
500 gr strong flour
14 g fresh yeast
200 ml milk
60 gr sugar
40 gr honey
80 ml sunflower oil
1 egg
Zest of 1 lemon
Pinch of salt
STUFFED
3 apples
100 gr sugar
Half lemon juice
30 gr butter
Ground cinnamon (optional)
Preparation of braid stuffed with apple with thermomix
MASS
we sift the flour,
20 seconds / speed 8.
Set aside and reserve
We temper the milk and add the crumbled yeast and a tablespoon of sugar, stir and let it rest for 15 minutes.
We add to the glass, the egg, the rest of the sugar, honey, zest, oil and the milk with the yeast,
5 seconds / speed 4,
now the reserved flour and salt,
10 seconds / speed 4.
We let it rest for 20 minutes so that the flour particles are hydrated.
Then, we will do 3 kneadings of
2 min, spike speed,
with its 5 min rest between kneading and kneading
Pour into a lightly greased bowl and cover.
We let it increase in size (about 2 hours and 30 minutes, always depending on the temperature of your kitchen)
After that time, we degas (remove the air created after rising), kneading for a minute by hand.
STUFFED
We peel and cut the apples into small cubes.
Place it in a frying pan and add the butter, when it has melted, add the apples, sugar and lemon juice, let it cook over low heat, stirring occasionally, then, optionally, add the cinnamon.
Pour into a bowl and let cool.
FORMED AND BAKED
We sprinkle our work table with flour, we place the dough on top, we are going to stretch it with the help of a rolling pin, we will make a rectangle of about 50×36 cm (approximately).
Now, with the help of a knife or pizza cutter, we divide it into three parts.
In the middle of each part, we will place the caramelized apples without reaching the edges. Then we cover with the dough and seal the joints.
Once the three pieces are done, we proceed to make the braid
We place it on a lined baking tray.
We cover and let it rest for 40 min.
Preheated oven to 170°, heat up and down.
Brush with beaten egg and sprinkle with moistened sugar.
