ICE CREAM SNACKS WITH THERMOMIX

Recipe from our friend and collaborator Luz Maria Lagoa. Today we bring you an irresistible, easy and perfect option to refresh any time of the day with a homemade touch that everyone will love.

These bites are the perfect evolution of the classic ice cream, combining the creaminess of cheese and cream with the crunchy touch of Maria cookies. When prepared in individual molds, they are ideal to always have ready in the freezer and take out just the amount you need.

The best thing about this recipe is its versatility: although here we play with the flavors of cherry and peach, you can let your imagination fly and adapt it with your favorite jams or seasonal fruit purees. A guaranteed success for young and old!


INGREDIENTS

  • 🥛 300 ml whipping cream
  • 🍒 100 g cherry jam (preferably homemade)
  • 🍑 100 gr peach jam (preferably homemade)
  • 🍓 (You can use any jam or pureed fruit)
  • 🧀 150 gr cream cheese
  • 🍪 Maria cookies (round)
  • 🍯 Extra jam for the middle layer

PREPARATION

1 Place the butterfly on the blades of the Thermomix, add the cream and semi-whip it, programming at speed 3.5.
2 Add the cream cheese to the glass and continue beating at speed 3.5, just long enough for it to blend well (it does not need to be a firm mixture).
3 Pour the contents of the glass into two bowls, dividing the mixture equally (half and half).
4 Place the chosen jam or fruit in each bowl and gently integrate it with the help of a spatula.
5 Pour each mixture into a piping bag to make the filling process much easier.
6 Prepare a cupcake or muffin mold (the silicone ones are ideal because they come out very well).
7 Put a cookie at the base of each hole, then a little cream, now add a thin layer of pure jam, then more cream and finish by closing with another Maria cookie.
8 When you have them all assembled, put the mold in the freezer for a minimum of 6 hours.
9 After that time, unmold the sandwiches according to the need of the moment. ONLY LEFT TO ENJOY, BONUS!
