This recipe has been sent by our friend Luz Maria Lagoa. Autumn flavors. I was already craving a pumpkin coke. Previously I had made them with raisins and walnuts inside.
I haven’t added them today. Yes, I have incorporated anise, it gives it a special touch, but you can omit it. It is juicy and fluffy, and super delicious. I recommend it

Pumpkin Coca ingredients with thermomix
400 g roasted pumpkin
5 eggs (M)
260 gr sugar
280 ml sunflower oil
50 ml anise (optional)
2 double sachets of gasificamtes
1 on chemical yeast (Royal type)
400 gr wheat flour
Sugar with a pinch of cinnamon to sprinkle on top
Preparation of pumpkin Coca with thermomix
First we will roast the pumpkin in the oven at 180°; heat up and down for 25/30 min.
We check that it is done.
We turn off and remove to cool.
Once tempered, we will mash it with a fork
We pour it into the glass, along with the eggs, sugar, anise and oil, 1 min, V-6.
Now we add the flour, baking powder envelopes and yeast, 20 sec, V-6.
We check that it has been integrated well, if not, we program 4 sec, V-6.
We line a mold with baking paper (mine is 32×22 cm)
We turn the dough over and lightly tap it against the table to remove any air bubbles.
Now we spread the sugar mixed with the cinnamon
Oven previously preheated to 180°, heat up and down.
We bake for about 40 minutes, after checking the toothpick, it comes out clean.
We turn off and remove.
When it tempers, we remove it from the mold and let it cool on a rack.
