Ingredients

- 🍋 ½ teaspoon lemon juice
- 🌽 1 tablespoon cornstarch
- 💧 3 tablespoons cold water
For the White Chocolate Mousse:
- 🍫 6 oz. white chocolate, chopped
- 🥛 1½ cups heavy cream, divided
- 🍚 ⅓ cup powdered sugar
- 🌿 1 teaspoon pure vanilla extract
- 🍓 1 cup fresh raspberries (optional)
For Topping:
- 🍓 Fresh raspberries
- 🌿 Fresh mint leaves
Instructions
- 1️⃣ Raspberry Sauce:
- 🍳 Place the raspberries, sugar, water, and lemon juice in the Thermomix bowl. Set to 10 min / 100°C / speed 2.
- 🌡️ Once cooked, pass the mixture through a fine sieve to remove the seeds and return it to the bowl.
- 🌽 Mix the cornstarch with cold water and add it to the raspberry sauce. Set to 2 min / 100°C / speed 2. Let it cool and refrigerate. ❄️
- 2️⃣ White Chocolate Mousse:
- 🍫 Add the chopped white chocolate and ¼ cup of heavy cream to the Thermomix bowl. Heat for 2 min / 50°C / speed 2. Stir until smooth and let it cool.
- 🥄 In another bowl, whip the remaining heavy cream with powdered sugar and vanilla until stiff peaks form.
