Raspberry ganache and white chocolate with Thermomix

Do you feel like a sweet and fruit touch for your desserts? With this recipe of Raspberry ganache and white chocolate Made in Thermomix, you can create a soft, creamy and flavor filling or coverage. 🍫🍒

Perfect for cakes, cupcakes or even to enjoy alone, this ganache combines the acidity of the raspberry with the sweetness of white chocolate. Let’s prepare it step by step! 🥄💖


Ingredients 🛒

🍫 250 g of white chocolate (Minimum 33% cocoa)
🍓 70 g of homemade raspberry puree

🥛 200 ml of cream to mount (hot)
🥛 200 ml of cream to mount (cold)
🌿 ½ vanilla pod

🎨 Red food coloring (optional)

👩‍🍳 Preparation:

1️⃣ Prepare raspberry puree:

  • Put 100 g of raspberries in the thermomix and crushed glass 10 sec / vel 5.
  • Strain the puree to eliminate the seeds and reserve. ❄️

2️⃣ Crushing chocolate:

  • Place the chocolate in pieces in the glass and program 10 sec / vel 7.
  • Reserve in a large bowl. 🍫🔪

3️⃣ Heat the cream:

  • Pour the hot cream and vanilla pod in the glass and program 3 min / 90 ° C / Vel 1.
  • Remove vanilla sheath. 🥛🌿

4️⃣ Mix chocolate and raspberry:

  • Add the hot cream to the bowl with the chocolate and let stand 2 min.
  • Then, it removes until the chocolate is completely melt.
  • Incorporates the raspberry puree and mix well. 🍓🍫

5️⃣ Add the cold cream:

  • Pour the cold cream and mix with a spatula.
  • Then, place everything in the glass and bat 20 sec / vel 3. 🌀🥄

6️⃣ Cross the ganache:

  • Pour into a bowl, cover with film and refrigera Minimum 3 hours. ❄️⏳

7️⃣ Monta the ganache:

  • When it is cold, place in the glass and beat 1 min / vel 3.5 until creamy. 🎂💕
