Preparation of the Cookie Base

1. Place all the base ingredients (120 g of Oreo® cookies, 25 g of sugar and 50 g of butter) in the Thermomix glass.
2. Program 20 seconds at progressive speed 5-7-9.
3. Pour the mixture into a removable mold with a diameter of 18-20 cm.
4. Use a spoon to press into a uniform, compact base.
5. Reserve in the refrigerator while you prepare the filling.

Preparation of the Creamy Filling

1. Without washing the glass, add the 300 g of cream cheese, 250 g of mascarpone cheese, 160 g of sugar, 15 g of pastry flour and 50 g of liquid cream.
2. Program 1 minute at speed 3.
3. Then, program another minute at speed 4, adding the 3 eggs one by one through the mouth.
4. Place the 10 Oreo® cookies in a bag and crush them lightly.
5. Add the crushed cookies to the glass and mix with the spatula.
6. Pour this mixture over the cookie base in the mold.
7. Smooth the surface with the spatula.

Cheesecake Baking

1. Preheat the oven to 180°C.
2. Bake the cheesecake for 15 minutes.
3. Reduce the oven temperature to 130°C and bake for a further 60-70 minutes, until the top is set but the center is still slightly moist.
4. Remove from the oven and run a knife between the cake and the walls of the mold to loosen it without unmolding.
5. Let cool to room temperature and then refrigerate for at least 6 hours (preferably overnight).

Cheesecake Decoration

1. Place the butterfly on the Thermomix blades.
2. Add 250 g of cream and 20 g of cream cheese, both very cold.
3. Program at speed 3½ without time, watching until the mixture is assembled.
4. Remove the butterfly and add 40 g of icing sugar, mixing with enveloping movements.
5. Unmold the cheesecake and spread the whipped cream over the surface.
6. Decorate with mini Oreo® cookies and, if desired, sprinkle with powdered Oreo® cookies.
