Folded Bread with Herb Butter in Thermomix 🌿
A spectacular bread to share
This folded bread with herb butter is one of those that surprises at first sight and makes you fall in love with the first bite.
Crispy on the outside, spongy on the inside and full of aroma thanks to the spiced butter, it is perfect to accompany meals, serve as an appetizer or place in the center of the table and let everyone take their portion.
The Thermomix facilitates both the preparation of the aromatic butter and the kneading, achieving an elastic and perfect dough without effort.

Folded Bread with Herb Butter in Thermomix
🛒 Ingredients (for approx. 20 slices)
For the herb butter
- 1 small onion, halved
- 2 cloves of garlic
- Leaves of 5 parsley stems
- Leaves from 5 stems of thyme
- 1 bunch of basil
- 1 teaspoon dried oregano
- 90 g butter in pieces
- 1 teaspoon medium hot mustard
- ½ teaspoon sweet paprika
- 30 g extra virgin olive oil
- 3 pinches freshly ground black pepper
- ½ teaspoon salt
For the dough
- 300 g of water
- 40 g fresh yeast
- 1 teaspoon sugar
- 600 g of type 405 flour (plus a little for flouring)
- 1.5 teaspoons salt
- 50 g extra virgin olive oil

👩🍳 Step-by-step preparation in Thermomix
1️⃣ Prepare the herb butter
Place the onion, garlic cloves and parsley, thyme and basil leaves in the glass.
Chop 10 seconds / Speed 5.
Scrape down the remains with the spatula. Add the butter, mustard, paprika, olive oil, pepper and salt.
Mix 20 seconds / Speed 3.
Pour the mixture into a container and clean the glass well.
2️⃣ Prepare the dough
In the clean glass, add the water, fresh yeast and sugar.
Program 3 minutes / 37°C / Speed 2.
Add the flour, salt and olive oil.
Knead for 3 minutes / Knead function.
Place the dough on a lightly floured surface, knead it briefly by hand, and roll it out into a large rectangle (about the size of a baking sheet).
3️⃣ Fill and fold
Spread the entire surface of the dough with the herb butter.
Cut the dough into strips about 12 cm wide.
Fold each strip in an accordion shape (zigzag folding) and place them standing, one next to the other, inside a rectangular mold (approx. 30 cm) previously lined with baking paper.
4️⃣ Leavened
Cover the mold and let it rest in a warm place for 30 minutes, until it increases slightly in volume.
5️⃣ Baked
Preheat the oven to 200°C (up and down heat).
Brush the surface with the cream.
Bake 25-30 minutes until golden and crispy.
Carefully remove from the mold and allow to cool slightly before serving.
✨ Tips and variations
- You can add grated cheese between the folds for an even tastier version.
- If you prefer it more intense, add a little extra garlic powder.
- For a sweet version, eliminate salt and spices and fill with butter, brown sugar and cinnamon or even chocolate chips.
- It can be reheated for a few minutes in the oven before serving.
