For the sourdough:
70 grams of whole milk
1 dessert spoon of sugar
10 grams of fresh baker’s yeast
120 grams of flour
For the rest of the dough:
60 grams of cold water
90 grams of light olive oil
20 grams of fresh baker’s yeast
1 teaspoon vanilla flavor
450 grams of flour
2 eggs
120 grams of sugar
25 grams of honey
1 pinch of salt
Powdered sugar

Preparation of Bambas de nata with thermomix
To start we will make the mother dough, which will be the dough that will give volume to our sneakers.
Place the milk, sugar, yeast and flour in the Thermomix bowl, program.
10 seconds / Speed 5
Remove the mixture from the Thermomix bowl and make a ball. Then, in a container with warm water (room temperature) introduce the sourdough and leave until it floats and doubles in size.
On the other hand, make the rest of the dough without placing the cup in the Thermomix bowl.
Back in the glass of the thermomix, add water and oil, program.

Then add yeast, program.
5 seconds / speed 5
Immediately add the flour, vanilla, eggs, sugar, honey, a pinch of salt and the sourdough (which must be risen), program.
30 seconds/ Speed 5
Then, program again with the glass closed.
2 minutes / Spike speed
After these 2 minutes, let the dough rest inside the same glass of the thermomix covered and if possible covered with a towel, so it stays warmer. The dough will double or triple its size, you will notice because the dough will stick out of the mouth.
Knead again with the glass closed, program
1 minute / spike speed
The dough is ready, now form round portions of approximately 100 grams with your hands and place them on a tray lined with baking paper. Let stand until doubled in size as well.
