Ingredients
250 grams of pastry flour
1 egg.
Lemon zest.
30 grams of sugar
1 dash of anise
1 teaspoon of olive oil
25 grams of lard
a pinch of salt

4 eggs
500 grams of fresh cheese without salt
250 grams of sugar
A pinch of peppermint.
Preparation
For the base
To start we put the ingredients of the dough in our Thermomix bowl but only with half the life we mix
15 seconds / speed 6
then we knead
2 minutes / spike speed
While it is kneading, we add the rest of the flour until it is complete.
We take a mold and spread it with a little butter, put the dough on top and spread them, let it rest
We preheat the oven to 180º.
For the filling
Once our Thermomix bowl is clean we are putting the ingredients for the filling the eggs, the sugar, the Yerbabuena and the cheese and we program
30 seconds / speed 6
and we put our filling dough on top of the dough that we already have prepared
then we put the cake in the oven for approximately 40-45 minutes
The dough should have a golden appearance
when I finished we let it cool and we put icing sugar on top
