- 2 cucumbers
- 150 g of light white cheese (natural Greek yogurt or fresh cheese)
- A few fresh mint leaves (plus a few extra for garnish)
- Salt and pepper to taste
- A splash of lemon juice

- Prepare the ingredients
- Peel the cucumbers and cut them into medium pieces.
- Grind the ingredients
- Place the cucumber pieces in the Thermomix glass. Add the white cheese, mint leaves, a pinch of salt, pepper and lemon juice.
- Program 30 seconds at speed 7 to blend everything.
- Get the foamy texture
- Scrape the sides of the glass with the spatula. Then mix again for 1 minute at speed 4, gradually increasing to speed 7 until you obtain a homogeneous and foamy texture.
