This recipe has been made by our friend Luz María Lagoa Vives. Hello comrades. It had been a while since I made a cake.
Today, to make use of some egg whites that I had in the freezer that I only used the yolks in the last preparations of the cakes, (and I still have some left), nothing is thrown away here. I have used them in a pasiego.
Although you can also use whole eggs in this preparation, there would be 3, the other ingredients as is. Also tell you that instead of vanilla essence, I add anise. The result as a whole, a bite of authentic pleasure.
Very fluffy, ideal to accompany in the afternoons with coffee. It is not a tall cake, but if you want it, use a smaller mold and it would be taller.
I have used one of 27×20 cm. I recommend it.

Pasiego sponge cake ingredients with thermomix
- 6 egg whites (TA)
- Pinch of salt
- 160 gr creamed butter
- 200 gr sugar
- 3 tablespoons vanilla essence (and anise)
- 10 gr chemical yeast (Royal type)
- 250 gr wheat flour
- Powdered sugar (for finishing, completely optional)
Preparation of Pasiego cake with thermomix
- Butterfly in blades, butter and sugar in the glass, let’s cream it,
- 4 minutes / speed 3.5,
- we add the essence,
- 10 seconds / speed 3.5.
- Now the previously sifted flour and yeast,
- 40 seconds / speed 3.5.
- We remove to a bowl.
- We wash and dry both the glass and the butterfly extremely.
- We place the butterfly on blades, add the egg whites and a pinch of salt,
- 6 minutes / speed 3.5.
- When finished, we add to the previous dough, little by little and with enveloping movements.
- We line the base and sides of the mold with baking paper.
- We pour the dough and distribute it well over the surface (it is a dense dough, so we will have to reach all the edges of the mold well, help you with a spatula to spread it well and make it even on all sides.
- Oven preheated to 170°, heat up and down
- We bake for about 25/30 minutes / after checking the toothpick, it comes out clean
- We turn off and remove.
- We leave it for about 5 minutes and then unmold it.
- Let it cool completely.
- ONLY LEFT TO ENJOY, GOOD PROFIT
