Stuffed Berliners with Thermomix
Ingredients
Vanilla Cream 🍮
- 1 vanilla bean (only the seeds) or 1 tsp natural vanilla extract 🍦
- 100 g sugar
- 500 g whole milk 🥛
- 5 egg yolks 🥚
- 50 g wheat flour 🌾
Berliner Dough 🍩
- 170 g whole milk �
- 280 g water 💧
- 15 g fresh yeast 🧂
- 80 g sugar 🍚
- 50 g unsalted butter, cubed 🧈
- 500 g wheat flour 🌾
- 1 egg 🥚
- 1 egg yolk 🟡
- ½ tsp salt 🧂
- 20 g freshly squeezed lemon juice 🍋
- Wheat flour for dusting 🌾
- Vegetable oil for frying 🛢️
- Powdered sugar for dusting (optional) ❄️
Instructions
Vanilla Cream 🍮:
- Place the sugar and vanilla seeds (or extract) in the Thermomix mixer and pulverize for 10 seconds / speed 10.
- Add the milk, egg yolks, and flour. Mix for 10 seconds / speed 4.
- Cook for 7 minutes / 90°C / speed 3.
- Pour the cream into a bowl, cover it with plastic wrap (directly on the cream), and let it cool completely. ❄️
Berliner Dough 🍩:
- Place the milk and water in the mixer and heat for 2 minutes / 37°C / speed 1.
- Add the yeast and sugar. Mix for 10 seconds / speed 3.
- Add the butter, flour, egg, egg yolk, salt, and lemon juice. Knead for 3 minutes / dough function.
- Let the dough rise in the mixer until it doubles in size (about 1 hour). ⏳
- Remove the dough from the mixer, dust a work surface with flour, and roll out the dough to 1 cm thickness.
- Cut out circles about 5-6 cm in diameter and place them on a floured baking sheet. Cover with a cloth and let them rest for 30 minutes. 🕒
Frying and Filling 🍳✨:
- Heat plenty of oil over medium heat and fry the Berliners until golden brown on both sides. Drain on paper towels.
- Fill the vanilla cream into a piping bag with a filling tip.
- Make a small cut in each Berliner and fill them with the vanilla cream.
- Dust with powdered sugar before serving (optional). ❄️
