750 grams of pork belly
Salt
Black pepper
Lemon
Baking soda

Chicharron preparation in air fryer – air fryer

We have a 750gr piece of pork belly, we are going to clean the part of the rind a little with absorbent paper
We are going to salt that area of the crust abundantly and let it repair like this for about 40 minutes (we do this to dehydrate it)
After 40 minutes, we are going to remove the salt and clean again with absorbent paper, then we proceed to cut the bacon into strips and make the typical cut of pork rinds on the meat side.
now we put the strips of bacon in aluminum foil and add the juice of half a lemon, salt and ground black pepper to the meaty part, turn them over and add salt and bicarbonate (the bicarbonate will help make it much more crispy)
Now we close the aluminum foil well and put it in the fryer basket, so it will be
15 minutes / 180ºC
Once the tin is over, we take the bacon out of the aluminum foil and put it in the fryer basket, now they will be
15 minutes / 190ºC
after this time we turn it over and leave
10 minutes / 200ºC
and finally we will leave it for 5 more minutes on the part of the crust facing up, and our chicharrón will be ready.

Grades

The times may be less if you ignore the aluminum foil step, but this is the way to make the meat much juicier and more tender and make that perfect contrast with the super crispy crust.
