- 200g digestive biscuits
- 500g cream
- 100g butter
- 500g Philadelphia type cheese
- 250g mascarpone cheese
- 500g whole milk
- 200g sugar
- 1 tablespoon liquid vanilla
- 2 envelopes of curd
- 400g strawberries and raspberries
- The juice of half a lemon
- 150g sugar
- 1 sheet of neutral gelatin
- Strawberries and raspberries to decorate, with mint leaves

Steps to Prepare the Cookie Base
- The first step in preparing our no-bake cheesecake with strawberry and raspberry jam is to create the cookie base.
- Step 1: Crush the Cookies
- Place the cookies in the Thermomix and chop them for 10 seconds at speed 5. Then, add the butter and mix for 10 seconds at speed 4.
- Step 2: Form the Base
- Pour the mixture into a springform pan and flatten with the back of a spoon, making sure the base is even. Reserve in the refrigerator to harden.
Preparation of the Cheese Filling
- Now that the base is ready, it’s time to prepare the filling.
- Step 3: Mix the Filling Ingredients
- In the clean Thermomix glass, place the Philadelphia cheese, the mascarpone cheese, the cream, the 200 grams of sugar, the vanilla and the two envelopes of curd. Mix everything for 15 seconds at speed 7.
- Step 4: Cook the Filling
- Program the Thermomix for 12 minutes at 100ºC and speed 4. When finished, pour the mixture over the biscuit base with the help of a spatula.
- Step 5: Refrigerate the Cake
- Reserve in the refrigerator for a minimum of 5 to 6 hours so that the filling reaches the right consistency.
Preparation of Strawberry and Raspberry Jam
- While the cake is cooling, you can prepare the delicious jam that will cover our no-bake cheesecake with strawberry and raspberry jam.
- Step 6: Hydrate the Gelatin
- Soak a gelatin sheet in a bowl of cold water.
