Espresso-Creme Ingredients (Thermomix)
- 6 tablespoons hot water
- 6 teaspoons instant espresso
- 125g mascarpone
- 500 g low-fat quark cheese
- 50g sugar
- 200 g whipping cream (very well chilled)
- 4 tablespoons chocolate covered coffee beans
- 1 tablespoon icing sugar (for dusting)
Preparation of Espresso-Creme (Thermomix)
- Prepare the espresso:
- Put the hot water in the Thermomix glass and add the instant espresso.
- Program 10 seconds / speed 3 to dissolve.
- Remove the espresso from the glass and let it cool.
- Prepare the mascarpone cream:
- Place the mascarpone, quark cheese and sugar in the glass.
- Mix for 15 seconds / speed 4 until you obtain a homogeneous cream.
- Add half of the cooled espresso and blend for 10 seconds / speed 4.
- Whip the cream:
- Place the butterfly on the blades.
- Add the cold cream and whip for 1 minute/speed 3.5, making sure it doesn’t go too far.
- Remove the butterfly and, with the help of a spatula, add the whipped cream to the mascarpone mixture with enveloping movements.
- Give the final touch:
- Pour the rest of the espresso over the cream in a thread.
- Use a fork to create a marbled effect on the surface.
- Assembly and decoration:
- Serve the cream in individual dessert glasses.
- Decorate with chocolate covered coffee beans.
- Sprinkle with icing sugar just before serving.
