Ingredients of radish and tzatziki verrine with thermomix
For the tzatziki:
- 200 g Greek yogurt
- 1/2 cucumber
- 1 small clove of garlic
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
For the radishes:
- A dozen fresh radishes
- A few extra radishes to decorate
For decoration:
- A few leaves of fresh herbs (mint, chives or parsley)
- A pinch of Espelette pepper (optional)
Preparation of radish and tzatziki verrine with thermomix
- Prepare the cucumber for the tzatziki
- Wash and partially peel the cucumber if you prefer. Grate it using a coarse grater and place it in a clean cloth or strainer. Squeeze it well to remove excess water.
- Prepare the tzatziki in Thermomix
- Place the grated cucumber in the Thermomix glass. Add the Greek yogurt, garlic clove (peeled), lemon juice, olive oil, salt and pepper.
- Mix for 20 seconds at speed 4 or until the mixture is homogeneous.
- Pour the tzatziki into a container and refrigerate for at least 15 minutes to intensify the flavors.
- Prepare the radishes
- Wash the radishes and cut them into very thin slices. Reserve some for final decoration.
- Assembly of verrines
- Place a layer of radish slices in the bottom of each glass.
- Add a layer of tzatziki.
- Alternate layers of radishes and tzatziki as desired for an appealing visual effect.
- Decorate and serve
- Finish with a few slices of radish, a pinch of Espelette pepper (optional) and some fresh herb leaves.
- Serve immediately or refrigerate until ready to serve.
