Ingredients for Butter Cookies with Blueberries, Orange and Pistachios
225 g butter, at room temperature
150 g icing sugar
1 teaspoon vanilla extract
1 teaspoon orange zest
300 g wheat flour
1/4 teaspoon salt
120 g dried cranberries
100 g pistachios, chopped
Preparation of Butter Cookies with Blueberries, Orange and Pistachios
Preparation of the dough:
Place the butter in the Thermomix glass and beat at speed 3 for 1 minute until creamy.
Add the icing sugar, vanilla extract and orange zest. Mix at speed 3 for 30 seconds.
Add the flour and salt. Mix on speed 3 for 30 seconds or until well incorporated.
Add the cranberries and pistachios. Mix on speed 2 for 20 seconds, or until evenly distributed throughout the dough.
Dough formation and cooling:
Take the dough out of the glass and divide it into two equal parts.
Shape each part into a log approximately 5cm in diameter.
Wrap each log in plastic wrap and refrigerate for at least 2 hours, or until firm.
Cutting and baking the cookies:
Preheat the oven to 175°C (350°F) and line a baking sheet with parchment paper.
Take the dough logs out of the refrigerator and cut them into slices about 1 cm thick.
Place the slices on the baking sheet, leaving a small space between each cookie.
Bake for 12-15 minutes, or until the edges are lightly golden.
Let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
