Ingredients for Chocolate Tiramisu in a Glass with Thermomix
Chocolate syrup for soaking:
- 250 g hot water
- 15 g unsweetened cocoa powder
- 25 g granulated sugar
- 30 g chocolate liqueur or brandy (optional)
Chocolate ganache:
- 100 g dark chocolate, chopped
- 120 g whipping cream
Stuffed:
- 250 g mascarpone cheese, at room temperature
- 1 teaspoon pure vanilla extract
- 250 g whipping cream (minimum 35% fat)
- 65 g granulated sugar
- 200 g sponge cakes (18-24 units)
- Cocoa powder or grated chocolate, to sprinkle on top
Preparation of Chocolate Tiramisu in a Glass with Thermomix
1. Chocolate syrup:
- Place the hot water, cocoa powder, sugar and liquor (if using) in the Thermomix glass. Program 20 seconds / speed 4.
- Remove the syrup to a bowl and let it cool slightly.
2. Chocolate Ganache:
- Place the chopped chocolate in the glass and chop for 5 seconds/speed 7.
- Add the whipping cream and heat for 4 minutes / 50°C / speed 2.
- Remove the ganache to a bowl and let it cool slightly.
3. Filling:
- Place the mascarpone and vanilla extract in the glass. Mix 20 seconds / speed !3, until you obtain a creamy texture. Remove and reserve.
- Without washing the glass, place the butterfly. Add the whipping cream and sugar. Mount speed 3.5, without programming time, watching the mouth until firm peaks form.
- Remove the butterfly and add the mascarpone mixture. Mix 10 seconds / speed 3 or until homogeneous.
- 4. Assembling the tiramisu:
- Quickly (less than a second) dip the sponge cakes into the chocolate syrup. Break each one into 4 pieces and place them in the bottom of the glasses.
- Add a layer of the mascarpone mixture.
- Pipe a thin layer of chocolate ganache (about 1-1.5 teaspoons).
- Repeat the layers once more and finish with a layer of mascarpone.
- Sprinkle the top with cocoa powder or grated chocolate.
- 5. Cooling:
- Refrigerate for at least 1-2 hours before serving. This tiramisu keeps in the refrigerator for up to 3 days.
